Eggplant And Mozzarella

Ingredients
- 1 medium eggplant
- 1 minced garlic clove
- 3 Tbsp olive oil
- 1 c crushed tomatoes
- 14 c slivered basil
- 5 oz cubed Mozzarella
- 12 c cooked rigatoni
Directions
- Saute the eggplant cubed with minced garlic in olive oil Stir in the tomatoes and simmer for 10 minutes
- Toss with basil cubed Mozzarella and rigatoni
