Eggplant Au Gratin

Ingredients

  • 1 eggplant
  • salt flour and pepper
  • olive oil
  • 4 tomatoes cored and chopped
  • 1 lb mushrooms sliced
  • 1 Tbsp capers
  • 2 cloves garlic diced
  • 1 bunch green onions chopped
  • 1 c tomato sauce
  • 12 c dry white wine
  • 1 tsp Italian herbs
  • salt and pepper if needed
  • 12 lb grated Jack cheese

Directions

  1. Trim ends from eggplant and slice in 12-inch rounds Sprinkle slices with salt and pepper and roll in flour
  2. Heat oil 12-inch deep in large skillet and fry eggplant slices until golden brown on both sides
  3. Line bottom and sides of a 1 12 quart casserole with eggplant slices
