Eggplant Au Gratin

Ingredients

  • 4 small eggplants
  • 2 large onions
  • cracker crumbs and butter
  • 1 lb sharp cheese
  • 2 eggs
  • salt and pepper

Directions

  1. Peel and boil eggplants in salted water until soft strain off water and mash
  2. Fry sliced onions in butter
  3. Beat eggs
  4. Grate cheese
  5. Combine ingredients salt and pepper to taste
  6. Place in greased casserole
  7. Cover with crumbs dot with butter
  8. Bake in moderate oven for 45 minutes
  9. Serves 8 to 10
