Eggplant Au Gratin

Ingredients
- 4 small eggplants
- 2 large onions
- cracker crumbs and butter
- 1 lb sharp cheese
- 2 eggs
- salt and pepper
Directions
- Peel and boil eggplants in salted water until soft strain off water and mash
- Fry sliced onions in butter
- Beat eggs
- Grate cheese
- Combine ingredients salt and pepper to taste
- Place in greased casserole
- Cover with crumbs dot with butter
- Bake in moderate oven for 45 minutes
- Serves 8 to 10
