Eggplant Genovese

Ingredients

  • 1 large eggplant
  • slices of Mozzarella cheese
  • 12 oz tomato paste
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp brown sugar
  • 1 tsp oregano
  • 1 tsp basil
  • dash of garlic powder

Directions

  1. Mix the tomato paste with an equal amount of water
  2. Add herbs salt and sugar simmer on low heat to a boil
  3. Cut the eggplant in one-inch slices lengthwise
  4. Pour oil in casserole and alternate layers of eggplant slices with cheese finishing with the cheese
  5. Pour the tomato sauce over it and bake in preheated oven at 375 for 35 to 40 minutes
