Eggplant Genovese
Ingredients
- 1 large eggplant
- slices of Mozzarella cheese
- 12 oz tomato paste
- 2 Tbsp olive oil
- 1 tsp salt
- 1 tsp brown sugar
- 1 tsp oregano
- 1 tsp basil
- dash of garlic powder
Directions
- Mix the tomato paste with an equal amount of water
- Add herbs salt and sugar simmer on low heat to a boil
- Cut the eggplant in one-inch slices lengthwise
- Pour oil in casserole and alternate layers of eggplant slices with cheese finishing with the cheese
- Pour the tomato sauce over it and bake in preheated oven at 375 for 35 to 40 minutes
