Eggplant Moussaka
Ingredients
- 1 large or 2 medium eggplants cut into large chunks and unpeeled
- 1 onion chopped
- 1 green pepper chopped
- 1 clove garlic cut up
- 1 stalk celery diced
- 2 c tomatoes
- 12 c cracked wheat cereal
Directions
- Steam eggplants for 2 to 3 minutes
- Saute onion green pepper garlic and celery in vegetable oil
- Add tomatoes and cook briefly 5 to 10 minutes
- Add to mixture the cracked wheat cereal and simmer 20 minutes or so until cereal is cooked
- Add tomatoes or tomato sauce if liquid evaporates
