Eggplant Moussaka

Eggplant Moussaka

Ingredients

  • 1 large or 2 medium eggplants cut into large chunks and unpeeled
  • 1 onion chopped
  • 1 green pepper chopped
  • 1 clove garlic cut up
  • 1 stalk celery diced
  • 2 c tomatoes
  • 12 c cracked wheat cereal

Directions

  1. Steam eggplants for 2 to 3 minutes
  2. Saute onion green pepper garlic and celery in vegetable oil
  3. Add tomatoes and cook briefly 5 to 10 minutes
  4. Add to mixture the cracked wheat cereal and simmer 20 minutes or so until cereal is cooked
  5. Add tomatoes or tomato sauce if liquid evaporates
