Eggplant Oysters

Ingredients
- 1 medium eggplant
- 10 whole crackers crumbled
- 1 large egg
- 12 tsp pepper
- 14 c Bisquick mix
Directions
- Peel eggplant and cover with water boil until tender
- Drain and cool
- Add egg and pepper and mix well
- Add Bisquick mix Drop mixture into deep hot fat oil until brown
