Eggplant Patties

Ingredients

  • 2 large eggplant
  • 2 eggs
  • 1 tsp baking powder
  • 12 stick butter or margarine
  • 2 c Italian bread crumbs
  • 12 c flour
  • dash of sugar
  • 12 c sweet milk

Directions

  1. Peel the eggplant and slice them up
  2. Then place them in large bowl fill bowl with water and put 12 teaspoon salt in water to keep the eggplant from turning dark
  3. Let stand for 3 minutes then drain off
  4. Place the eggplant in pot boil on medium heat until tender
  5. Mash them up
  6. Add the ingredients in mix well with spoon
  7. Make small patties place in skillet in hot fat at 275
  8. Fry until golden brown
  9. Serve while warm
