Eggplant Stuffed Artichokes

Ingredients

  • 1 eggplant sliced into 12-inch slices then chunks
  • 1 Tbsp oil
  • 3 green onions chopped
  • 1 tomato diced
  • garlic to taste
  • 2 to 3 artichokes

Directions

  1. Wash eggplant and saute in oil with onions tomato and garlic Steam artichokes until done
  2. Stuff with eggplant mixture and serve hot
