Eggplant Stuffed Artichokes

Ingredients
- 1 eggplant sliced into 12-inch slices then chunks
- 1 Tbsp oil
- 3 green onions chopped
- 1 tomato diced
- garlic to taste
- 2 to 3 artichokes
Directions
- Wash eggplant and saute in oil with onions tomato and garlic Steam artichokes until done
- Stuff with eggplant mixture and serve hot
