Eggplant With Two Cheeses
Ingredients
- 14 c olive or vegetable oil
- 14 tsp garlic salt
- 1 15 oz can tomato sauce
- 13 c Parmesan cheese
- 12 tsp oregano
- 2 c shredded Mozzarella cheese
- 13 c flour
- 1 medium eggplant peeled and cut in 12-inch slices
Directions
- Mix flour and garlic salt
- Coat eggplant
- Cook in oil over medium heat turning once until golden brown
- Pour 12 of tomato sauce into ungreased oblong 13 12 x 9 x 2-inch baking dish
- Add eggplant
- Sprinkle with Parmesan cheese
- Add remaining tomato sauce
- Sprinkle with oregano and Mozzarella cheese
- Cook uncovered in 325 oven until hot and bubbly about 25 minutes
