Eggplant With Two Cheeses

Ingredients

  • 14 c olive or vegetable oil
  • 14 tsp garlic salt
  • 1 15 oz can tomato sauce
  • 13 c Parmesan cheese
  • 12 tsp oregano
  • 2 c shredded Mozzarella cheese
  • 13 c flour
  • 1 medium eggplant peeled and cut in 12-inch slices

Directions

  1. Mix flour and garlic salt
  2. Coat eggplant
  3. Cook in oil over medium heat turning once until golden brown
  4. Pour 12 of tomato sauce into ungreased oblong 13 12 x 9 x 2-inch baking dish
  5. Add eggplant
  6. Sprinkle with Parmesan cheese
  7. Add remaining tomato sauce
  8. Sprinkle with oregano and Mozzarella cheese
  9. Cook uncovered in 325 oven until hot and bubbly about 25 minutes
