Enchilada Bake

Ingredients

  • 2 lb ground chuck
  • 1 pkg taco seasoning
  • 1 can refried beans
  • 1 can sweet peas drained
  • 12 c chopped onion
  • 12 c chopped green pepper
  • salsa
  • flour tortilla shells
  • 2 lb box Velveeta
  • 1 small can Ro-Tel
  • 1 small can chopped chilies
  • 1 can cream of mushroom soup
  • 1 can Cheddar cheese soup
  • sour cream
  • black olives
  • mushrooms

Directions

  1. Brown ground chuck onion and green pepper and drain fat
  2. Mix in taco seasoning refried beans and sweet peas
  3. Add salsa to desired consistency
  4. Place meat mixture approximately 2 tablespoons in a flour tortilla
  5. Roll place into cake pan Fold side down
  6. Fill cake pan with enchiladas
