Enchilada Pie

Ingredients

  • 2 onions
  • 2 or 3 bell peppers red or green or combination
  • 2 cloves garlic
  • 1 28 oz can tomatoes
  • 2 lb ground beef
  • salt and pepper
  • 1 Tbsp red wine vinegar
  • 2 tsp cumin
  • 1 tsp oregano
  • 6 flour tortillas
  • 2 fresh jalapeno peppers
  • 3 oz Cheddar cheese about 34 c grated
  • 3 oz Mozzarella cheese about 34 c grated

Directions

  1. Heat oven to 350
  2. Slice onions and bell peppers
  3. Mince garlic
  4. Drain tomatoes
  5. Cook beef in a large frying pan until no longer pink
  6. Remove with a slotted spoon
  7. Add onions bell peppers garlic 12 teaspoon salt and 14 teaspoon pepper
  8. Cook until soft about 15 minutes
