Enchilada Pie
Ingredients
- 2 onions
- 2 or 3 bell peppers red or green or combination
- 2 cloves garlic
- 1 28 oz can tomatoes
- 2 lb ground beef
- salt and pepper
- 1 Tbsp red wine vinegar
- 2 tsp cumin
- 1 tsp oregano
- 6 flour tortillas
- 2 fresh jalapeno peppers
- 3 oz Cheddar cheese about 34 c grated
- 3 oz Mozzarella cheese about 34 c grated
Directions
- Heat oven to 350
- Slice onions and bell peppers
- Mince garlic
- Drain tomatoes
- Cook beef in a large frying pan until no longer pink
- Remove with a slotted spoon
- Add onions bell peppers garlic 12 teaspoon salt and 14 teaspoon pepper
- Cook until soft about 15 minutes
