European-Style Meat Loaf

Ingredients

  • 3 lb total ground sirloin ground veal and mild Italian sausage or ground pork equal portions of each
  • 2 large eggs slightly beaten
  • 13 c diced green pepper
  • 5 Tbsp red wine Burgundy or Port
  • 14 c diced onion
  • 2 Tbsp Worcestershire sauce
  • 3 Tbsp ketchup
  • 3 Tbsp tomato paste
  • 13 to 12 c bread crumbs just enough to form a solid ball
  • 18 tsp each thyme marjoram and paprika
  • salt and pepper if desired

Directions

  1. Preheat oven to 350
  2. Oil a 9 14 x 5 14 x 2 34-inch or similar size loaf pan and dust with grated Parmesan or Romano cheese
  3. Combine all ingredients very well in a large bowl and form into a ball
  4. If mixture does not form well keep adding bread crumbs a tablespoon at time until formed
  5. Spread out evenly in pan
  6. Cover with foil and bake for 20 minutes
  7. Uncover and bake another 15 to 20 minutes or until meat has shrunken from the sides
