European-Style Meat Loaf
Ingredients
- 3 lb total ground sirloin ground veal and mild Italian sausage or ground pork equal portions of each
- 2 large eggs slightly beaten
- 13 c diced green pepper
- 5 Tbsp red wine Burgundy or Port
- 14 c diced onion
- 2 Tbsp Worcestershire sauce
- 3 Tbsp ketchup
- 3 Tbsp tomato paste
- 13 to 12 c bread crumbs just enough to form a solid ball
- 18 tsp each thyme marjoram and paprika
- salt and pepper if desired
Directions
- Preheat oven to 350
- Oil a 9 14 x 5 14 x 2 34-inch or similar size loaf pan and dust with grated Parmesan or Romano cheese
- Combine all ingredients very well in a large bowl and form into a ball
- If mixture does not form well keep adding bread crumbs a tablespoon at time until formed
- Spread out evenly in pan
- Cover with foil and bake for 20 minutes
- Uncover and bake another 15 to 20 minutes or until meat has shrunken from the sides
