Eyes Of Texas Salad

Ingredients

  • 1 12 c black-eyed peas cooked and drained well
  • 1 c rice cooked
  • 1 c chicken cooked and finely chopped
  • 14 c celery chopped
  • 14 c onion chopped
  • 14 c mayonnaise
  • 12 tsp salt
  • 1 tsp pepper
  • dash of hot sauce

Directions

  1. Combine cooled black-eyed peas rice and chicken
  2. Add remaining ingredients blend well and pack into an oiled 5 12 cup mold
  3. Refrigerate until set
  4. Unmold and spread with Avocado Topping
  5. Dont like molds
  6. Just use a casserole dish
