Coat two 5 x 3-inch loaf pans with nonstick cooking spray
Divide mixture evenly between pans and bake at 325 for about 45 minutes or just until a wooden toothpick inserted in center of each loaf comes out clean
Remove bread from oven
Let sit for 10 minutes
Invert loaves onto wire rack
Turn right side up
Cool to room temperature
Wrap bread in foil and let sit overnight before slicing and serving
