Ingredients

  • 1 c whole wheat flour
  • 14 c light brown sugar
  • 12 tsp baking powder
  • 34 c unsweetened applesauce
  • 2 egg whites
  • 23 c whole dried apricots
  • 23 c dried pineapple chunks
  • 23 c whole pitted prunes
  • 12 c golden raisins
  • 12 c chopped dried dates or chopped walnuts

Directions

  1. Combine flour brown sugar and baking powder
  2. Stir to mix well
  3. Add applesauce and egg whites
  4. Stir to mix well
  5. Fold in the fruits
  6. Coat two 5 x 3-inch loaf pans with nonstick cooking spray
  7. Divide mixture evenly between pans and bake at 325 for about 45 minutes or just until a wooden toothpick inserted in center of each loaf comes out clean
  8. Remove bread from oven
  9. Let sit for 10 minutes
  10. Invert loaves onto wire rack
  11. Turn right side up
  12. Cool to room temperature
  13. Wrap bread in foil and let sit overnight before slicing and serving
  14. Yields 20 slices
