Family Favorite Carrot Cake

Ingredients

  • 1 c raisins
  • boiling water
  • 2 13 c all-purpose flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 12 tsp baking soda
  • 12 tsp salt
  • 1 12 c sugar
  • 34 c Crisco
  • 3 eggs
  • 34 c milk
  • 2 c carrots finely shredded and lightly packed
  • 12 c walnuts chopped

Directions

  1. Preheat oven to 350
  2. Cover raisins with boiling water let stand 5 minutes
  3. Drain
  4. Combine flour baking powder cinnamon baking soda and salt
  5. In large bowl beat sugar Crisco and eggs until fluffy
  6. Add flour mixture and milk beat on medium speed 2 minutes
  7. Stir in carrots raisins and walnuts
  8. Spread into greased and floured 9 x 13 x 2-inch baking pan or two 9-inch round layer cake pans
  9. Bake 30 to 35 minutes or until wooden toothpick comes out clean
  10. Cool completely
  11. Frost with Lemon Cream Cheese frosting
  12. Store covered in refrigerator
