Family Favorite Carrot Cake

Ingredients
- 1 c raisins
- boiling water
- 2 13 c all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 12 tsp baking soda
- 12 tsp salt
- 1 12 c sugar
- 34 c Crisco
- 3 eggs
- 34 c milk
- 2 c carrots finely shredded and lightly packed
- 12 c walnuts chopped
Directions
- Preheat oven to 350
- Cover raisins with boiling water let stand 5 minutes
- Drain
- Combine flour baking powder cinnamon baking soda and salt
- In large bowl beat sugar Crisco and eggs until fluffy
- Add flour mixture and milk beat on medium speed 2 minutes
- Stir in carrots raisins and walnuts
- Spread into greased and floured 9 x 13 x 2-inch baking pan or two 9-inch round layer cake pans
- Bake 30 to 35 minutes or until wooden toothpick comes out clean
- Cool completely
- Frost with Lemon Cream Cheese frosting
- Store covered in refrigerator
