  • 2 tsp baking powder
  • 12 tsp salt
  • 12 c sugar
  • 12 c orange juice
  • 2 egg whites
  • 13 c Karo light or dark corn syrup
  • 1 tsp grated orange peel
  • 1 c coarsely chopped fresh or frozen cranberries

Directions

  1. Spray 12 2 12-inch muffin cups with cooking spray
  2. In a large bowl combine flour baking powder and salt
  3. In medium bowl using a wire whisk or fork thoroughly mix sugar and orange juice
  4. Whisk in egg whites corn syrup and orange peel until blended
  5. Gradually add to flour mixture stirring until smooth Stir in cranberries
  6. Spoon into prepared muffin cups
  7. Bake in 400 oven 25 minutes or until lightly browned and firm to touch Cool in pan 5 minutes
  8. Serve warm or cool completely on wire rack
  9. Store in airtight container
