Favorite Fishermans Chowder

Ingredients

  • 1 12 lb fresh or frozen halibut fillets
  • 12 medium onions whole
  • 4 to 5 medium potatoes chopped
  • 14 c butter or margarine
  • 3 Tbsp butter
  • 4 tsp salt
  • 12 tsp pepper
  • 3 c boiling water
  • 1 qt milk scalded
  • 1 c light cream
  • 1 ripe tomato optional

Directions

  1. Cut fillets into 2 to 3 pieces
  2. In heavy skillet saute onions in 14 cup butter until golden brown about 20 minutes Add potatoes salt pepper and boiling water
  3. Arrange fish fillets on top
  4. Cover and simmer about 30 minutes or until vegetables are tender
  5. Add scalded milk light cream and 3 tablespoons butter
  6. Heat until very hot
  7. Slice tomato and float on top of chowder
