Fiesta Bake

Ingredients

• 1 medium chopped onion
• 2 Tbsp butter
• 1 8 oz can tomato sauce
• 1 4 oz can green chili pepper chopped
• 8 corn tortillas
• 2 eggs beaten
• 1 c half and half
• 12 lb Jack cheese cubed
• 1 c grated Cheddar
• sour cream
• paprika

Directions

1. Saute onion in butter add tomato sauce chili pepper and salt
2. Simmer 5 minutes
3. Remove
4. Beat eggs and cream together add to sauce
5. Grease 8 x 8 x 2-inch pan
6. Layer 4 tortillas on bottom half of Jack cheese and half of sauce
7. Repeat
8. Cover with sour cream Cheddar and paprika
9. Bake at 325 for 20 to 25 minutes
10. Let stand 5 minutes before serving
