Fiesta Crab Crisps

Ingredients

  • 2 Mission light flour tortillas
  • vegetable oil cooking spray
  • 6 oz cooked Alaskan crab meat
  • 12 c diced red bell pepper
  • 3 Tbsp reduced calorie mayonnaise
  • 2 Tbsp Italian parsley
  • 2 Tbsp chopped chives
  • 1 Tbsp fresh lime juice
  • 1 Tbsp Dijon mustard
  • 1 Tbsp grated Parmesan cheese
  • 4 drops Tabasco sauce

Directions

  1. Cut tortillas into 6 wedges each and spray both sides with cooking spray
  2. Place pieces on an ungreased baking pan and bake in a preheated 400 oven for 10 minutes or until crisp Combine remaining ingredients in a medium bowl and mix well
  3. Spread a rounded tablespoonful of crab mixture on each tortilla wedge place wedges on an ungreased baking pan
  4. Broil for 5 minutes until lightly brown
  5. Serve immediately
  6. Serves 6
