Fiesta Potato Salad
Ingredients
- 6 c diced cooked potatoes
- 14 c chopped green pepper
- 2 hard-cooked eggs sliced
- 12 c diced radishes
- 1 c chopped celery
- salt and pepper to taste
- 1 c salad dressing
- lettuce
Directions
- Combine ingredients except lettuce
- Place in a lettuce-lined bowl
- Garnish with parsley and additional eggs and radishes
