Fiesta Tamale Casserole
Ingredients
- 12 lb pork sausage
- 1 c minced onion
- 34 c diced green pepper
- 1 lb ground beef
- 1 can Mexicorn
- 13 c sliced olives
- 1 tsp liquid from corn and olives
- 1 12 c tomato sauce
- 2 15 oz cans tamales
- 1 c grated cheese
Directions
- In a large skillet brown pork sausage
- Remove to paper towel
- Leave 3 tablespoons drippings in skillet
- Add onion and green pepper
- Saute until tender
- Stir in ground beef
- Cook until browned
- Add sausage corn and olives liquid from corn and olives and tomato sauce
- Mix well
- Simmer gently for 15 minutes Open tamales drain liquid
- Save 13 cup
- Add to meat
- Remove parchment wrapping from tamales
- Spoon meat mixture in large shallow casserole dish
- Arrange tamales on top
- Bake uncovered at 350 for 15 minutes
- Sprinkle with cheese
- Return to oven about 20 minutes
- Serves 6
