Fiesta Tamale Casserole

Ingredients

  • 12 lb pork sausage
  • 1 c minced onion
  • 34 c diced green pepper
  • 1 lb ground beef
  • 1 can Mexicorn
  • 13 c sliced olives
  • 1 tsp liquid from corn and olives
  • 1 12 c tomato sauce
  • 2 15 oz cans tamales
  • 1 c grated cheese

Directions

  1. In a large skillet brown pork sausage
  2. Remove to paper towel
  3. Leave 3 tablespoons drippings in skillet
  4. Add onion and green pepper
  5. Saute until tender
  6. Stir in ground beef
  7. Cook until browned
  8. Add sausage corn and olives liquid from corn and olives and tomato sauce
  9. Mix well
  10. Simmer gently for 15 minutes Open tamales drain liquid
  11. Save 13 cup
  12. Add to meat
  13. Remove parchment wrapping from tamales
  14. Spoon meat mixture in large shallow casserole dish
  15. Arrange tamales on top
  16. Bake uncovered at 350 for 15 minutes
  17. Sprinkle with cheese
  18. Return to oven about 20 minutes
  19. Serves 6
