Fish Cakes Oven Baked Or Fried

Ingredients

  • 2 c cooked fish
  • 2 Tbsp chopped onion
  • 2 Tbsp bacon fat
  • 1 Tbsp salt
  • 2 eggs beaten
  • 3 c mashed potatoes
  • 1 Tbsp catsup optional
  • 1 12 c dried bread crumbs

Directions

  1. Separate fish into small flakes
  2. Cook onion in fat or oil until limp
  3. Combine eggs mashed potatoes catsup and salt with fish and onion in a bowl
  4. Portion mixture into cakes and roll in bread crumbs
  5. Space in single layer on well oiled shallow pan and bake 8 to 10 minutes
  6. If frying use bacon fat until brown on both sides
