Fish Cakes Oven Baked Or Fried
Ingredients
- 2 c cooked fish
- 2 Tbsp chopped onion
- 2 Tbsp bacon fat
- 1 Tbsp salt
- 2 eggs beaten
- 3 c mashed potatoes
- 1 Tbsp catsup optional
- 1 12 c dried bread crumbs
Directions
- Separate fish into small flakes
- Cook onion in fat or oil until limp
- Combine eggs mashed potatoes catsup and salt with fish and onion in a bowl
- Portion mixture into cakes and roll in bread crumbs
- Space in single layer on well oiled shallow pan and bake 8 to 10 minutes
- If frying use bacon fat until brown on both sides
