FloraS Pepper-Rice Rings And Pork Chops

Ingredients
- 2 Tbsp shortening
- 6 pork chops
- onion slices 6
- green pepper slices 6
- 1 12 c quick cooking rice
- 46 oz can tomato juice
- 1 12 tsp salt
Directions
- Heat fat
- Brown chops on both sides
- Place onion and pepper ring slices on each chop
- Fill rings with rice
- Pour spoon tomato juice over rice to moisten
- Add seasoning
- Reduce temperature to about 240
- Cook approximately 1 hour
