Fluffy Coconut Pudding

Ingredients

  • 1 envelope unflavored gelatin
  • 14 c cold water
  • 3 Tbsp boiling water
  • 3 egg whites
  • 18 tsp salt
  • 6 Tbsp sugar
  • 12 tsp vanilla extract
  • 1 c whipping cream whipped
  • 23 c canned moist-type flaked coconut
  • Mandarin oranges for garnish

Directions

  1. Soften gelatin in cold water
  2. Add boiling water and stir until dissolved
  3. Cool to room temperature
  4. Beat egg whites with salt until frothy
  5. Add sugar 1 tablespoon at a time and beat well after each addition
  6. Continue beating until mixture holds a peak when beater is lifted
  7. Slowly beat gelatin
  8. Add vanilla to whipped cream
  9. Mix and fold into egg whites
  10. Fold in coconut Cover and chill at least 4 hours
  11. Garnish with Mandarin oranges and serve
