Fluffy Key Lime Pie

Ingredients

• 1 4 serving size pkg lemon flavored puddingpie filling
• 1 c sugar
• 1 12 c water
• 2 egg yolks
• green food coloring
• 3 Tbsp lime juice
• 34 tsp grated lime rind
• 14 c sugar
• 1 baked 9-inch graham cracker crumb crust cooled

Directions

1. Combine pie filling mix 1 cup of sugar and 14 cup of water in saucepan
2. Blend in egg yolks add remaining water
3. Cook and stir over medium heat until mixture comes to a full boil
4. Remove from heat stir in lime juice and rind
5. Beat egg white until foamy throughout
6. Gradually add 14 cup sugar and continue beating until mixture will form stiff shiny peaks
7. Blend in pie filling mixture
8. Add enough food coloring to tint light green pour onto crust
9. Chill until firm
10. Garnish with prepared whipped topping lime slices or twists
