Fluffy Potato Casserole
Ingredients
- 2 c mashed potatoes
- 1 8 oz pkg cream cheese room temperature
- 1 small onion finely chopped
- 2 eggs
- 2 Tbsp flour
- salt and pepper to taste
- 1 3 12 oz can French fried onions
Directions
- Put potatoes into large bowl of electric mixer
- Add cream cheese onion eggs and flour
- Beat at medium until light and fluffy
- Salt and pepper as needed
- Spoon into a 9-inch square baking dish
- Sprinkle canned onions over top
- Bake at 300 for 35 minutes
- Makes 6 to 8 servings
