Fluffy Potato Casserole

Ingredients

  • 2 c mashed potatoes
  • 1 8 oz pkg cream cheese room temperature
  • 1 small onion finely chopped
  • 2 eggs
  • 2 Tbsp flour
  • salt and pepper to taste
  • 1 3 12 oz can French fried onions

Directions

  1. Put potatoes into large bowl of electric mixer
  2. Add cream cheese onion eggs and flour
  3. Beat at medium until light and fluffy
  4. Salt and pepper as needed
  5. Spoon into a 9-inch square baking dish
  6. Sprinkle canned onions over top
  7. Bake at 300 for 35 minutes
  8. Makes 6 to 8 servings
