French Fried Eggplant

Ingredients

  • 1 eggplant
  • 2 c white flour
  • 2 tsp salt
  • 1 tsp pepper
  • peanut oil

Directions

  1. Slice eggplant 12-inch thick and slice again to make 12 x 3-inch sticks
  2. Place eggplant on paper towels sprinkle with 1 teaspoon salt and let sit for 20 minutes
  3. Combine flour 1 teaspoon salt and pepper in paper bag
  4. Add eggplant and shake to coat slices with flour
  5. Heat 1 12-inches oil in skillet until very hot
  6. Fry eggplant until golden brown do not crowd them fry in batches if necessary
  7. Drain on paper towels sprinkle with salt
  8. Serve immediately
