French Market Soup

Ingredients
- 1 pkg mixed dried beans
- ham sausage or chicken or a combination of leftover meats
- 2 onions chopped
- 2 green peppers chopped
- 3 to 4 stalks celery chopped
- 2 cans tomatoes chopped with own juice
- garlic minced to taste
- parsley
- bay leaf
- Tonys Creole seasoning
- Tabasco to taste
Directions
- After soaking beans add water and cook beans according to package directions for about 1 hour
- Add rest of ingredients and bring to a boil
- Cover and simmer for another 2 to 3 hours or until beans are tender stirring occasionally
- Great alone or can serve over rice
- Freezes well
