French Vanilla Ice Cream

Ingredients

  • 6 egg yolks
  • 2 c milk
  • 1 c sugar
  • 14 tsp salt
  • 2 c heavy cream
  • 1 Tbsp vanilla extract

Directions

  1. In top part of double boiler beat egg yolks and milk with rotary beater
  2. Add sugar and salt
  3. Cook stirring constantly over hot not boiling water until thick enough to coat a metal spoon
  4. Let cool
  5. Then add cream and vanilla
  6. Freeze according to freezer manufacturers directions
  7. Makes about 1 12-quarts
