Fresh Apple Cake

Ingredients

• 3 eggs
• 1 14 c oil
• 2 c sugar
• 3 c plain flour
• 3 apples peeled and chopped
• 1 tsp vanilla
• 1 c pecans chopped
• 1 tsp salt
• 1 tsp baking soda

Directions

1. Preheat oven to 350
2. Blend eggs oil and sugar until creamy
3. Add flour salt and baking soda a little at a time blend well batter will be stiff
4. Fold in apples vanilla and nuts
5. Pour into tube pan
6. Bake for 1 hour
7. Remove from pan after about 30 minutes
