Fresh Apple Coffee Cake

Ingredients

• 4 c unpeeled finely chopped cooking apples
• 12 c unsweetened orange juice divided
• 1 12 tsp ground cinnamon
• 1 c sugar
• 12 c margarine softened
• 1 8 oz carton frozen egg substitute thawed
• 14 c skim milk
• 3 c sifted cake flour
• 2 tsp baking powder
• 14 tsp salt
• 2 12 tsp vanilla extract
• vegetable cooking spray
• 2 Tbsp brown sugar

Directions

1. Combine apples 14 cup unsweetened orange juice and cinnamon in a bowl stir well and set aside
