Fresh Apple Muffins

Ingredients
- 12 c vegetable oil
- 12 c sugar
- 2 eggs
- 12 tsp vanilla
- 1 12 c unbleached flour
- 12 c whole wheat flour
- 1 Tbsp baking powder
- 12 tsp salt
- 1 12 c peeled and chopped tart green apples
- 12 c chopped pecans
Directions
- Preheat oven to 350
- In a large bowl mix together oil sugar eggs and vanilla beat with a whisk until creamy smooth In a separate bowl combine flours baking powder and salt
- Add to egg mixture beating just until well blended
- Fold in apples and nuts
- Fill greased muffin tins about 34 full
- Bake about 25 minutes or until inserted toothpick comes out clean
- Turn out on wire rack and cool slightly before serving
