Fresh Apple Pound Cake

Ingredients

• 1 14 c cooking oil
• 2 c sugar
• 3 eggs
• 2 tsp vanilla
• 3 c all-purpose flour
• 1 tsp baking soda
• 34 tsp cinnamon
• 1 c pecans chopped
• 3 medium apples peeled and chopped
• 14 c or so water if dough gets too thick for mixer

Directions

1. Combine oil sugar and eggs beat at medium speed for 3 minutes
2. Combine dry ingredients and add to mixture
3. Fold in pecans and apples
4. Bake in greased and floured tube pan at 325 for 1 hour and 20 minutes or until cake is done
