Fresh Blueberry Cobbler
Ingredients
- 12 c plus 1 Tbsp sugar
- 1 Tbsp cornstarch
- 4 c fresh blueberries or peaches
- 1 tsp lemon juice
- dash of ground nutmeg
- 1 c sifted all-purpose flour
- 1 12 tsp baking powder
- 12 tsp salt
- 3 Tbsp vegetable shortening
- 12 c milk
Directions
- Heat oven to 400
- Blend 12 cup sugar and cornstarch in medium saucepan
- Stir in blueberries lemon juice and nutmeg Cook stirring constantly until mixture comes to a boil
- Boil and stir for 1 minute
- Pour hot fruit mixture into ungreased 2-quart casserole
- Place in oven to keep hot while preparing biscuit topping
