Fresh Blueberry Pie
Ingredients
- 1 9-inch baked pie shell
- 5 c fresh blueberries
- 1 c sugar
- 8 Tbsp cornstarch
- 1 tsp grated lemon rind
- 1 c water
- whipped cream topping or Cool Whip
Directions
- Bring berries 1 cup 34 cup sugar and lemon rind to boil in saucepan
- Combine remaining sugar 14 cup and 14 cup water with cornstarch
- Stir into boiling berries
- Cook about 1 minute until thickened
- Cool to room temperature
- Pour in other 4 cups berries stir to coat
- Pour in baked pie shell
- Chill until completely set
- Decorate with whipped cream or Cool Whip and a few berries
