Fresh Lemon Meringue Pie
Ingredients
- 1 12 c sugar
- 14 c plus 2 Tbsp cornstarch
- 14 tsp salt
- 12 c cold water
- 12 c freshly squeezed lemon juice
- 3 egg yolks well beaten
- 2 Tbsp butter or margarine
- 1 12 c boiling water
- 1 tsp grated peel
- food coloring if desired
- 1 9-inch baked pie shell
Directions
- Mix sugar cornstarch and salt
- Use wire whisk
- Blend in cold water then lemon juice until smooth
- Add beaten egg yolks Blend thoroughly
- Add butter and boiling water stirring constantly
- Bring to a boil until thickened
- Pour into pie crust
- Add meringue
- Bake at 400 for 10 minutes
