Fresh Lemon Meringue Pie

Ingredients

  • 1 12 c sugar
  • 14 c plus 2 Tbsp cornstarch
  • 14 tsp salt
  • 12 c cold water
  • 12 c freshly squeezed lemon juice
  • 3 egg yolks well beaten
  • 2 Tbsp butter or margarine
  • 1 12 c boiling water
  • 1 tsp grated peel
  • food coloring if desired
  • 1 9-inch baked pie shell

Directions

  1. Mix sugar cornstarch and salt
  2. Use wire whisk
  3. Blend in cold water then lemon juice until smooth
  4. Add beaten egg yolks Blend thoroughly
  5. Add butter and boiling water stirring constantly
  6. Bring to a boil until thickened
  7. Pour into pie crust
  8. Add meringue
  9. Bake at 400 for 10 minutes
