Fresh Peach Cake

Ingredients

  • 4 eggs
  • 2 c sugar
  • 1 c vegetable oil
  • 3 c all-purpose flour
  • 1 tsp salt
  • 1 Tbsp baking powder
  • 14 c orange juice
  • 2 12 tsp vanilla extract
  • 2 c sliced fresh peaches
  • 14 c sugar
  • 2 tsp cinnamon
  • confectioners sugar

Directions

  1. Preheat oven to 350
  2. Beat eggs and add sugar and oil mixing well
  3. Combine flour salt and baking powder add to egg mixture alternately with orange juice
  4. Add vanilla extract
  5. In a separate bowl toss peaches with sugar and cinnamon
  6. Pour 13 batter into a greased lightly floured tube pan
  7. Layer 12 peach mixture over it
  8. Cover with 13 batter and the remaining peach mixture
  9. Spread remaining batter over all
  10. Bake one hour
  11. Cool cake 10 minutes before turning out onto a wire rack
  12. Sprinkle with confectioners sugar
