Fresh Peach Cake
Ingredients
- 4 eggs
- 2 c sugar
- 1 c vegetable oil
- 3 c all-purpose flour
- 1 tsp salt
- 1 Tbsp baking powder
- 14 c orange juice
- 2 12 tsp vanilla extract
- 2 c sliced fresh peaches
- 14 c sugar
- 2 tsp cinnamon
- confectioners sugar
Directions
- Preheat oven to 350
- Beat eggs and add sugar and oil mixing well
- Combine flour salt and baking powder add to egg mixture alternately with orange juice
- Add vanilla extract
- In a separate bowl toss peaches with sugar and cinnamon
- Pour 13 batter into a greased lightly floured tube pan
- Layer 12 peach mixture over it
- Cover with 13 batter and the remaining peach mixture
- Spread remaining batter over all
- Bake one hour
- Cool cake 10 minutes before turning out onto a wire rack
- Sprinkle with confectioners sugar
