Fresh Peach Ice Cream

Ingredients

• 12 ripe medium peaches
• 1 Tbsp lemon juice
• 2 34 c sugar
• 1 12 qt heavy cream chilled
• 1 tsp vanilla
• 1 tsp almond extract
• 12 tsp salt

Directions

1. Dip into boiling water the peaches
2. Plunge peaches into cold water
3. Slip off skins Cut in half
4. Discard pits
5. Press peaches through sieve or food mill into mixing bowl
6. Stir in 1 tablespoon lemon juice and the sugar
7. Let stand for 15 to 20 minutes Combine the heavy cream vanilla almond extract and salt Stir into peach mixture Fill freezer container 23 full of mixture Cover tightly Set in freezer tub and freeze until firm
