Fresh Pear Cake

Ingredients

  • 3 eggs
  • 2 c granulated sugar
  • 1 12 c vegetable oil
  • 3 c all-purpose flour
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 12 c coarsely chopped pears
  • 1 tsp vanilla extract
  • 1 14 c confectioners sugar
  • 2 Tbsp milk

Directions

  1. Beat eggs on medium speed in large mixing bowl
  2. Gradually add sugar and oil
  3. Beat thoroughly
  4. Combine flour salt cinnamon and baking soda
  5. Add to egg mixture and mix well
  6. Stir in pears and vanilla
  7. The batter will be stiff Spoon into a greased and floured 10-inch tube pan
  8. Bake at 350 for 60 to 65 minutes or until cake tests done
  9. Let cool in pan for 10 minutes
