Fresh Squash Casserole

Ingredients
- 3 c zucchini or yellow squash sliced
- 14 c onion chopped
- 4 Tbsp margarine
- 2 eggs beaten
- 14 c milk
- 12 tsp salt
- 12 tsp pepper
- 1 c sharp cheese grated
- 1 c Ritz crackers crushed
Directions
- Preheat oven to 350 Saute squash and onions with the margarine until tender Drain Add eggs milk salt and pepper Spoon into a 9 x 13-inch casserole dish and top with cheese and crackers Bake for 20 minutes
