Fresh Tofu Loaf
Ingredients
- 2 eggs
- 10 oz can mushroom soup
- 12 c milk
- 4 Tbsp soy sauce
- 1 lb tofu drained 12 hour
- 1 c grated carrots
- 1 c green onions sliced
- 1 c whole wheat bread crumbs
- 4 oz can water chestnuts diced
Directions
- Beat eggs slightly
- Add mushroom soup beat and blend with milk and soy sauce
- Mash tofu coarsely and combine all ingredients mix well
- Bake in oiled loaf pan set in a pan of hot water at 350 about 45 minutes or until a knife inserted in the center comes out clean
- Let stand 10 minutes before unmolding
