Fresh Tofu Loaf

Ingredients

  • 2 eggs
  • 10 oz can mushroom soup
  • 12 c milk
  • 4 Tbsp soy sauce
  • 1 lb tofu drained 12 hour
  • 1 c grated carrots
  • 1 c green onions sliced
  • 1 c whole wheat bread crumbs
  • 4 oz can water chestnuts diced

Directions

  1. Beat eggs slightly
  2. Add mushroom soup beat and blend with milk and soy sauce
  3. Mash tofu coarsely and combine all ingredients mix well
  4. Bake in oiled loaf pan set in a pan of hot water at 350 about 45 minutes or until a knife inserted in the center comes out clean
  5. Let stand 10 minutes before unmolding
