Fresh Vegetable Casserole

Ingredients

  • 2 large onions sliced
  • 3 Tbsp butter more or less
  • 3 carrots sliced
  • 1 medium green pepper sliced
  • 12 lb green beans
  • 2 large tomatoes peeled and sliced
  • 14 c chopped parsley
  • 1 tsp salt
  • pepper optional

Directions

  1. Saute onions in butter until golden
  2. Separate into rings if desired
  3. Add pepper rings and cook until tender
  4. Combine ingredients in a 2-quart shallow casserole and toss lightly Cover and bake at 350 for 1 12 hours or until vegetables are tender stirring once
