Fresh Vegetable Casserole
Ingredients
- 2 large onions sliced
- 3 Tbsp butter more or less
- 3 carrots sliced
- 1 medium green pepper sliced
- 12 lb green beans
- 2 large tomatoes peeled and sliced
- 14 c chopped parsley
- 1 tsp salt
- pepper optional
Directions
- Saute onions in butter until golden
- Separate into rings if desired
- Add pepper rings and cook until tender
- Combine ingredients in a 2-quart shallow casserole and toss lightly Cover and bake at 350 for 1 12 hours or until vegetables are tender stirring once
