Fried Eggplant

Ingredients

• 1 eggplant
• 1 egg beaten
• flour
• salt
• pepper
• vegetable oil

Directions

1. Peel eggplant and slice
2. Dip slices in egg coat with flour and salt and pepper to taste
3. Fry in vegetable oil until tender
