Fried Eggplant

Ingredients
- 1 12 lb eggplant
- flour as needed
- 1 egg
- salt to taste
- pepper to taste
- Crisco for frying
Directions
- Cook
- peeled and cut up eggplant in water until tender Drain all water
- Mash eggplant mix in egg salt and pepper Add enough
- flour
- to
- make slightly thick
- Drop by teaspoon into hot
- grease
- Cook until brown and drain on paper towels or in colander
