Fried Eggplant Or Summer Squash

Ingredients
- 1 eggplant or 1 lb summer squash
- seasoned flour
- butter or Crisco
Directions
- Wash eggplant pare and cut in 12-inch slices
- Or wash squash and cut crosswise in slices
- Dip slices in well seasoned flour
- Saute slowly in butter for 10 to 15 minutes or until crisp and browned turning occasionally
- Serve hot
- Makes 6 servings
