Fried Eggplant Or Summer Squash

Ingredients

  • 1 eggplant or 1 lb summer squash
  • seasoned flour
  • butter or Crisco

Directions

  1. Wash eggplant pare and cut in 12-inch slices
  2. Or wash squash and cut crosswise in slices
  3. Dip slices in well seasoned flour
  4. Saute slowly in butter for 10 to 15 minutes or until crisp and browned turning occasionally
  5. Serve hot
  6. Makes 6 servings
