Fried Eggplant Or Zucchini

Ingredients
- 1 large eggplant or zucchini
- bread crumbs or cracker crumbs
- salt and pepper
- 2 eggs
- oil
- 12 c heavy cream
- milk
Directions
- Slice eggplant or zucchini into 14-inch slices
- Dip in egg mixture and then in bread crumbs
- Fry in oil in skillet until golden brown
- Drain on paper towel
- Serve immediately
