Fried Potatoes

Ingredients
- 4 or 5 medium potatoes
- 2 small onions
- 2 eggs beaten
- 12 c diced cooked ham or other leftover meat
- salt and pepper to taste
- 1 Tbsp corn oil
- 12 c water
Directions
- Slice unpeeled potatoes
- Peel and chop onions
- Put oil in cold skillet and heat to about 300
- Scatter potato slices over bottom of skillet
- Cover and cook about 5 minutes
- Turn potatoes over and brown other side in covered frypan about 2 or 3 minutes Uncover add chopped onions and water
- Replace cover and cook 3 minutes longer
- Uncover and add eggs and meat
- Stir until eggs are cooked
- Serve warm
