Fried Potatoes

Ingredients

  • 4 or 5 medium potatoes
  • 2 small onions
  • 2 eggs beaten
  • 12 c diced cooked ham or other leftover meat
  • salt and pepper to taste
  • 1 Tbsp corn oil
  • 12 c water

Directions

  1. Slice unpeeled potatoes
  2. Peel and chop onions
  3. Put oil in cold skillet and heat to about 300
  4. Scatter potato slices over bottom of skillet
  5. Cover and cook about 5 minutes
  6. Turn potatoes over and brown other side in covered frypan about 2 or 3 minutes Uncover add chopped onions and water
  7. Replace cover and cook 3 minutes longer
  8. Uncover and add eggs and meat
  9. Stir until eggs are cooked
  10. Serve warm
