Fried Sweet Potato Strips

Ingredients
- 1 large sweet potato, peeled and grated into long strips
- 1 c. vegetable oil
Directions
- Fry potato in hot oil in a small skillet until lightly browned (watch carefully, they brown quickly).
- Remove with a slotted spoon and drain on paper towels.
- (Strips will be crisp when cooled.)
- Yield:
- about 1 cup.
