Fried Yams

Ingredients
- 4 medium yams peeled and cut into 1-inch thick slices
- 4 c water
- a dash of salt
- 4 Tbsp butter or margarine
- 2 Tbsp sugar
Directions
- Soak sliced yams in water with salt for 30 minutes
- Remove from water drain and pat dry
- Melt butter in large heavy skillet until bubbly
- Add yams and brown quickly on both sides Sprinkle with sugar
- Stir gently to coat both sides
- Cover reduce heat to low heat
- Simmer for 15 to 20 minutes or until tender
