Fried Yams

Ingredients

  • 4 medium yams peeled and cut into 1-inch thick slices
  • 4 c water
  • a dash of salt
  • 4 Tbsp butter or margarine
  • 2 Tbsp sugar

Directions

  1. Soak sliced yams in water with salt for 30 minutes
  2. Remove from water drain and pat dry
  3. Melt butter in large heavy skillet until bubbly
  4. Add yams and brown quickly on both sides Sprinkle with sugar
  5. Stir gently to coat both sides
  6. Cover reduce heat to low heat
  7. Simmer for 15 to 20 minutes or until tender
