Frosted Orange Pie

Ingredients

  • 34 C sugar
  • 12 C all-purpose flour
  • 14 tsp salt
  • 1 14 C water
  • 2 egg yolks lightly beaten
  • 2 to 3 Tbsp grated orange peel
  • 12 tsp grated lemon peel
  • 12 C orange juice
  • 2 Tbsp lemon juice
  • 1 pastry shell 9 inches baked

Directions

  1. In a saucepan combine sugar flour and salt gradually add water
  2. Cook and stir over medium-high heat for 2-3 minutes or until thickened and bubbly
  3. Remove from heat
  4. Gradually stir 12 C into egg yolks return all to pan
  5. Bring to a gentle boil cook and stir for 2 minutes
  6. Remove from the heat stir in orange and lemon peel
  7. Gently stir in juices
  8. Pour into pastry shell Cool on a wire rack for 1 hour
  9. Chill at least 3 hours
