Frosted Pineapple Cookies

Ingredients

• 1 8 oz can crushed pineapple
• 12 c shortening
• 1 c packed brown sugar
• 1 egg
• 1 tsp vanilla extract
• 2 c all-purpose flour
• 1 12 tsp baking powder
• 14 tsp salt
• 1 12 c confectioners sugar

Directions

1. Drain pineapple reserving 3 tablespoons juice
2. Set pineapple aside set juice aside for frosting
